Vegan Cake Base:
- 250 gr (about 3 medium) carrots -50 gr raisins
- 1.5 cup dessicated coconut
- 1 teaspoon cinnamon
Steam carrots and blend with raisins until smooth. Add other ingredients and mix until you have a homogenous mixture. Cover a baking dish with parchment paper and press the mixture evenly.
Topping:
- 1.5 cup almond milk
- 1 cup rolled oats
- 1 tablespoon coconut oil
- 1 tablespoon honey
- 1 teaspoon vanilla
Blend the oats into oat flour and cook with almond milk like making oatmeal. When cooked, let it cool a bit and add honey, coconut oil and vanilla inside. Spread over the base and let cool in the fridge. Overnight would be the best but a couple of hours also work.
Slice into bars, top with some cinnamon and chopped walnuts.
