These bars were so delicious that they were all gone just in two days. Literally nothing left 😳
- 1+1/2 cup oats
- 1/2 cup almond, chopped
- 1/2 cup dried apricots, chopped into small chunks
- 1/4 cup peanut butter
- 1/4 cup honey (or another sticky sweetener to make vegan)
- A pinch of salt
- 1 teaspoon cinnamon
Mix the peanut butter, honey, salt and cinnamon in a big bowl. Toast the almonds and oats in a frying pan. Add them to the liquid mixture. Add the apricots on top and mix well. It will have a slightly sticky texture.
Cover a loaf pan with parchment paper and press the mixture in evenly. Press it well so it won’t fall apart as you cut the pieces.
Let it cool in the fridge for a couple of hours then cut into bars with a sharp knife.
